More Technical Info:
The vines are 40 years old and planted in clay/limestone soil. Cold carbonic maceration for 15 days; alcoholic fermentation with native yeast beginning on day 11; natural malolactic fermentation. Minimal sulfites added at bottling. Aged in concrete tanks for 6 months before bottling with no fining or filtration.
